Bento #32

I went to a meeting today and lunch was provided, so I didn't need a bento. (Wish I would have made a bento, though. The lunch was FULL of carbs, so I didn't really eat much.) Here's what's for lunch tomorrow:



Top container: Fresh mushrooms, celery, and carrots with Buffalo Bleu Cheese dressing for dipping

Bottom container: Leftover meatballs from supper

I won this bento on ebay. It was part of the Bento4Japan fundraiser. (For those of you who aren't familiar with it, the bento community is placing things up for auction on ebay, with winnings going to Japan Earthquake/Tsunami relief efforts. Just go to ebay and search Bento4Japan. LOTS of things up for auction!) I also won another bento that I will be using later.

Bento #30

So sorry I haven't posted in a week! Life gets in the way...you know how it is. Anyway, here is what I had for lunch last Friday.


Top container: Fresh Strawberries and Pineapple, Vanilla Yogurt to dip them in. (The happy people are in a "Hot Tub" of yogurt! LOL!)

Bottom container: The Skinny Chicken Nuggets and ranch dressing to dip them in; Fresh Green Beans.

All quite yummy!

Bento #29

Tomorrow I am going on a field trip with our 5th graders to Frankfort, Kentucky (our State's Capital). Some of the teachers will be eating a school lunch. I will be eating my Bento. AND...I offered to pack one of my very good friend's a Bento as well, AND SHE TOOK ME UP ON IT! I was so excited! Then, I was so nervous! I hope I packed things she would like. Below is a picture of both of our Bentos. Mostly the same, just the wraps are different. Here you go:


My friend's Bento is on the left and mine is on the right. The only difference is our wraps.

On the left: Turkey and cheese wrap with cream cheese on it.
Top right corner of her Bento: Carrot Cake dip with bite size vanilla wafers to use for dipping.
Bottom: Fresh Pineapple with a strawberry for garnish

My Bento on the right:
Top tier: Turkey and Cream Cheese Vegetable rolls
Bottom tier: Same as my friend's; fresh pineapple, carrot cake dip with vanilla wafers.

In our lunch sack, I also threw in some chips (if she wants them, I'm not a huge chip eater) and some of the new Fiber Plus bars (in case we need a snack).

I hope she likes her first Bento!!

Bento #28

The First Day of Spring was such a beautiful one here in Kentucky, that I decided to grill out tonight for dinner. We had cheeseburgers and hotdogs. So, tomorrow's lunch is a picnic lunch!


Right small container: Mustard potato salad
Right to left in bento: Strawberries, cheeseburger wrapped in lettuce
In the pink container: Ketchup and mustard

Now, I wanted watermelon, but they were still to darn expensive. Strawberries were on sale for 2/$4.00, so Strawberries it is! I love strawberries. When we lived in North Carolina, they grew so well there. I remember, during the end of March/beginning of April, there would be stands set up on the sides of roads selling BUCKETS of strawberries for $5.00. I would buy 2 buckets! I would freeze one and eat the other. They were the best strawberries!

Anyway, we're suppose to have a few more nice days, before it turns back to cooler, March, weather. I think I'm going to grill out chicken tomorrow night.

Bento #27

Sunday mornings are the day that I cook a big breakfast for my family. Well, we had a few left over sausage patties. I'm turning those leftover patties into lunch. Breakfast for lunch! Yum!!

Bento #26

Let's just call this bento, "Oh, crud!! It's Monday morning and I forgot to pack my lunch!" Not creative and thrown together. Here you go:




Top left: Grapefruit; Buffalo Blue Cheese dressing for the Chicken Nuggets
Top right: Edamame
Bottom left: Skinny Chicken Nuggets (will tell you more about these below)
Bottom right: Vegetable Stir-fry

So, I always like to keep my eyes open for different ways to get my protein in. While shopping the Chicken Nugget aisle for my kids, I come across this bag calling itself "Skinny Chicken Nuggets". Only 90 calories, .5 gram of fat, and 20 grams of protein for a serving (4 chicken nuggets). It also came with Buffalo or Barbecue sauces. Well, the package shows the nuggets slathered in sauce. I didn't think they came that way, but I was thinking "Nuggets", so they would be breaded like nuggets usually are. Much to my surprise when I opened them this morning, "Skinny Chicken Nuggets" are just grilled chicken chunks! I will say that they were very good and moist. I decided not to serve it with the sauces that came with them, as that would increase the calories and fat.

Overall, even though the meal was thrown together, it was still good.

Bento #25

Hello! Haven't posted in a week or so. My camera quit working. It would let me take pictures, but I couldn't see what I was taking pictures of! Changed the batteries, and it currently works. Fingers crossed that it was just a glitch! Anyway, here's what's for lunch today! I'm posting 2 pictures of my lunch. Sort of a before and after. Here's before:



Top left corner: Fresh strawberries and fresh pineapple
Top right corner: Vanilla Yogurt
Bottom left corner: Multi grain crackers and celery for...
Bottom right corner: the Hummus! It's a new flavor I tried - Spinach and Artichoke hummus
On the side: Graham crackers for my yogurt.

Now, when I took a picture of this, I thought that the yogurt looked a little plain. My daughter said, "Make a face or something on it!" Great idea! (Future bento maker!! HA!) So, I pulled out some frozen berries in my freezer and came up with this:



Much better! LOVE IT! I'll be posting this one on What's for Lunch Wednesday!
